Castoreum is a secretion from the castor sacs of beavers. It is used to mark territory when sprayed with their urine. Don’t get nervous! Castoreum has a warm, leathery, complex aroma with mineral like notes. Because an absolute was used for this infusion and not raw castor sacs, the scent really comes through with clarity and amplitude.
Absolutes are made from extracting aromatic compounds from raw materials using solvents, ethanol and filtering. The solvents and ethanol are evaporated and removed, leaving behind a highly aromatic and concentrated oil.
